JONBALAYA started on the food truck journey in 2010, in Nashville, TN. Why a food truck and not a restaurant? Family was the main reason, Jon didn't want to work long hours away from his family. So, he started a food truck, where his family could work side by side. Jon not only created the concept for JONBALAYA - he also built the first truck - and another. Jon has built over 12 trucks and trailers for others who carry on the food truck dream.
